Konjiki is doing something that I haven’t had in a bowl of ramen before. They are preparing their pork topping sous vide style. If you are unfamiliar with this method, check out this primer. I was really looking forward to trying this place because I wanted to try their clam shio ramen. Shio broths are really growing on me. They tend to be lighter, but they really highlight the other flavors.
This location is a little out of the way if you are staying in downtown Toronto, but it’s worth the drive.
